Cacao Pods THE BASICS OF ARTISAN CHOCOLATE MAKING

This class is designed for the serious chocolate maker and meets over three consecutive days. On the first day, you will learn how to temper chocolate and how to make a ganache in two flavors of your choice (about 7 1/2 hours). On Day 2 you will learn how to make your own transfer sheets, how to use and fill polycarbonate molds, and how to prepare slabbed ganache for subsequent enrobing (about 7 1/2 hours). On Day 3 you will learn how to enrobe pallets and rolled truffles and how to complete molded chocolates (about 4 1/2 hours). Various decorating techniques will be taught, including chocolate transfer sheets, applied decorations, luster dust, and tool marks. Approximately 60 bonbons will be created (about 20 of three flavors of ganache). Dark chocolate will be used.

Prices start at $1175.00 per person for a class focused on ganache bonbons. Classes are held in Jamaica Plain, MA and limited to three people per class. Email us to arrange a time (three consecutive days). No classes will be held in July, August, November, or December.

MAKING CHOCOLATE BONBONS PARTY

Share the fun with a private chocolate party! FRC will teach you and your friends how to make artisan chocolates. This class focuses on the final steps in chocolate making - enrobing and decorating. Parties take approximately three hours.

You will learn how to make ganache filling, how to roll your own truffles, mold your own chocolates, and make dipped chocolates. Each participant will take the chocolates made together home to enjoy or give away (if they can part with them!). Some packaging materials will be provided (e.g., boxes, ribbons, candy cups). Approximately 24 bonbons will be created per person (four flavors).

Dark chocolate will be used. Three flavors of prepared ganache will be provided and a fourth ganache to fill molds will be prepared at the party.

Prices start at $495.00 for a group of up to 7 people. Up to 14 people may be accommodated for an additional $65.00 for each extra person. Parties are held in Jamaica Plain, MA. FRC will come to your location in the greater Boston area for an additional $200. Parking and mileage charges may apply depending on location.

MAKING CHOCOLATE MENDIANTS AND BARK PARTY

Share the fun with a private chocolate party! FRC will teach you and your friends how to make your own chocolate treats. This class focuses on making chocolate bark and mendiants. Parties take approximately two hours.

In this class, you will add items of their choice (e.g., dried fruits, nuts, ginger, crispy items) to dark chocolate and enrobe pre-made ganache pallets. Each participant will take the chocolates they make home. Some packaging materials will be provided (e.g., cellophane bags & ribbons). Approximately 4 oz. of chocolate treats will be created per person.

Prices start at $400.00 for a group of up to 7 people. Up to 14 people may be accommodated for an additional $50.00 for each extra person. Parties are held in Jamaica Plain, MA. FRC will come to your location in the greater Boston area for an additional $200. Parking and mileage charges may apply depending on location.


 

CHOCOLATE TASTING PARTY

Taste and compare six dark chocolate couvertures in a guided, blind sampling. The types of chocolate will be revealed at the end. By sampling a range of different chocolates, you will discover chocolate's many flavor nuances. A brief lecture about the types of cacao grown and how chocolate is made is included.

Chocolate samples, tasting sheets and guides, flavor wheels, and palette cleansers will be provided.

Prices start at $225.00 for a group of six guests within the greater Boston area. Large groups may be accommodated. Please add $30.00 for each additional person. Parking and mileage charges may apply depending on location.
